Blowfish, octopus, eel, and clams caught from the calm waters of Mikawa and Ise Bays as well as the soil that yields the finest cabbage and figs are just some of the gifts Mother Nature has bestowed upon Aichi Prefecture. You can find them in local specialties like miso nikomi udon (udon noodles cooked in broth made from locally produced red miso), as well as signature Nagoya dishes like tebasaki and hitsumabushi. Then there are the popular cheap eats like Ichinomiya Morning, Seto yakisoba, and Toyokawa inarizushi that also hit the spot.

Aichi Prefecture is Japan's manufacturing hub. It is not only home to automobile, aerospace and other cutting-edge industries but has long been the capital of the ceramic industry. Seto and Tokoname, two of Japan's six historic pottery towns, are two great Aichi destinations for anyone who gets fired up over pottery. For anyone wanting to try their hand at traditional crafts like Owari Shippo cloisonne ware or Arimatsu-Narumi Shibori tie dying, Aichi is the place to go. The birthplace of such giants of Japanese history as Oda Nobunaga, Toyotomi Hideyoshi, and Tokugawa Ieyasu, Aichi is dotted with related historical sites, including Nagoya Castle. If that's not enough, there is also the Tokugawa Art Museum and much more.
